Thai Style Chicken Salad


1/2 C Canola Oil
3 Tbsp. Peanut Butter
1/2 C Fresh Lime Juice
2 Tbsp. Water
3 Small Garlic Cloves, crushed
2 tsp. grated ginger
2 Tbsp. Brown Sugar
1 1/2 tsp. Red Pepper Flakes

Blend it all together. I used an immersion blender

Then toss with shredded chicken, grated carrots, chopped cilantro, cucumber sliced into match sticks and a few sliced scallions.
